Italian Chicken Pasta Recipe

Simple Italian chicken pasta recipe, farfalle with prosciutto cotto, peas and tomatoes.

Ham and peas are one of the most common ingredients used in an Italian kitchen, with these ingredients you can prepare a delicious pasta with peas and prosciutto.

It's a very simple dish that will do for children, and it doesn't add fat so it's also fine for those who must deal with calories.



Chicken Pasta


Ingredients: serves 4

    - 12 oz (340g) pasta farfalle shape
    - 6 oz (140g) chicken breast
    - 3 oz (85g) Italian ham prosciutto cotto
    - 7 oz (200g) peas
    - 7 oz (200g) hard ripe tomatoes
    - 1 onion
    - 4 tbsp (60g) extra virgin olive oil
    - salt & pepper


Preparation: medium 50 minutes

1. Scald tomatoes in boiling water, drain depriving the skin, seeds, vegetation water, and cut the flesh into strips. Cut the chicken breast into strips too.

2. Peel the onions, wash and chop finely. In an oiled pan soften the onion. Add the chicken breasts and sauté for 3-4 minutes making brown on both sides, season with salt and pepper. Drain the strips and keep aside.

3. After, add in the same cooking pan the peas and sauté briefly, pour 1/2 cup water, season with salt and pepper and continue cooking for 10-15 minutes on medium heat. Add the strips of chicken, ham and tomatoes and cook for 3-4 minutes.

4. Cook the pasta in boiling salted water, drain and season with the sauce.
