Italian Duck BreastAmong those of you and lover of duck breast, this is an all-Italian version with balsamic vinegar. Only 220 calories per serving, it's an easy and tasty diet recipe, great as a main course paired with a good salad.

- 1 tbsp (15ml) balsamic vinegar - 1 onion - 2 carrots - 2 zucchine - 1 tbsp (15ml) extra virgin olive oil - salt and pepper Preparation: easy1. Peel the onion from the outer leaves, finely chop on the cutting board with a heavy knife and collect in a bowl with the balsamic vinegar. Combine also the meat and marinate for about 15 minutes covered. 2. After the time of marinating, heat a nonstick skillet over low heat, then drain the meat and sear on both sides. Add the remaining marinated liquid, a large pinch of salt, and freshly ground pepper, cover with a lid and cook for 15 minutes. 3. Peel and wash the carrots, and the zucchini, slice thinly lengthwise. Bring to boiling in a saucepan a little amount of water, combine the slices of vegetables and blanch for a couple of minutes. 4. Lay on the bottom of the dish the vegetables, seasoned with salt, and a drizzle of extra virgin olive oil, cut the meat into thick slices and fan out over the vegetables.
