Duck Sauce Recipe with Italian PolentaIt was just a few days ago that one of my readers asked me to publish a duck sauce recipe, so I came out with this tasty alternative to a traditional beef stew, and as with all recipes there are many ways to prepare such sauce. When I pulled down the book from my shelf I found this version that shows the sauce topping a base of Italian polenta which is not bad, but then I thought about how many other ways we can enjoy this duck sauce and not only with polenta. In Italy duck sauce is usually served with fresh pasta as tagliatelle or in Tusacny with homemade pici, it's only much more North bound that it's done with polenta. This is a rather simple and classic recipe, and the result is quite tasty but delicate. Duck's fat is used with this recipe, but you can remove and discard the fat of the duck if you want. Ingredients: serves 4
- 1 can 28oz peeled tomatoes - 1 onion - 1 stalk of celery - 1 carrot - 3 garlic cloves - 2 tbsp (30ml) extra virgin olive oil - 1/2 cup of dried or fresh porcini mushrooms - salt and pepper to taste
Preparation: medium1. Heat up the olive oil in a large non-stick frying pan and add the duck, cut into chunks. 2. Place the duck meat with the skin down so that its fat can melt and serve as a condiment. 3. Finely chop all the vegetables and put porcini mushrooms in lukewarm water.
4. Rotate the pieces of duck and add the chopped vegetables. At this point on the bottom of the pan there should be a layer of fat. 5. Fry the pieces of duck and move often, this is the only sensitive stage of the preparation of this duck sauce recipe. 6. After 5 minutes, add half of the tomato pulp.
7. Reduce the heat and leave to cook gentle for about an hour, turning the meat at least once. 8. Add the mushrooms, well drained and cook for 10 minutes. 9. Turn off the heat and get the pieces of duck.
10. If the meat is well cooked a fork should be enough to remove all the bones. 11. With spoon and fork if are unable to shred the duck put it all back and cook for a while longer. 12. Pass the sauce through a sieve, to be sure that there are no splinters of bone. Add the rest of the tomato and put in the meat pot.
13. Heat the duck sauce, stirring well. 14. And here is ready to be enjoyed with polenta, homemade pici or pappardelle.
