Italian Easy Spaghetti Sauce Recipe

Easy spaghetti sauce recipe with two typical Italian ingredients salted ricotta and arugula.

Salted ricotta (ricotta salata) is a firm salty grating cheese that is common in Southern Italy. But if it is hard for you to find it you can substitute with Pecorino Romano.

Arugula is an aromatic salad green. It is also known as rocket, roquette, rucola, and is popular in Italian cuisine.


Spaghetti Sauce


Ingredients: serves 4

With these ingredients you will make enough sauce to season about 12 oz (340g) of spaghetti.

    - 1 lb (450g) canned pureed San Marzano Tomatoes
    - Salted Ricotta cheese or Pecorino Romano enough for grating
    - about 20 arugula leaves
    - 1 onion
    - 2 garlic cloves
    - 2 tablespoons extra virgin olive oil
    - salt & pepper to taste

Preparation: easy 20 minutes

1. Brown lightly a chopped onion and 2 cloves of garlic with 2 tablespoons of oil.

2. Add the tomato puree salt and pepper to taste and cook for about 15 minutes over medium heat.

3. Add about twenty arugula leaves washed and dried to the tomato sauce.

Season spaghetti grating salted ricotta.
