There is a number of choices when it comes to lasagna, dried, dried no-boil, fresh pasta sheets, white, green, with or without eggs, all different qualities of lasagna.

There is no doubt that fresh noodles either homemade or store-bought, make the best lasagna.

Fresh pasta is a must when using béchamel, it will improve any lasagna, including those made with tomatoes and mozzarella.

No matter what kind of noodle you use, the layering procedure is pretty much the same. Spread a small amount of sauce over the pan to moister the bottom layer of pasta.

Lay down the first layer of noodles and then build as many layers as directed in individual recipes. The top layer should be covered with plenty of béchamel and Parmesan cheese to give the top an attractive crust.
