Lady Fingers Recipe

INGREDIENTS: yields 32 lady fingers
4 eggs - separated 2/3 C sugar 1 tsp. almond extract (or vanilla) 1/2 tsp. baking powder 3/4 C all-purpose flour
DIRECTIONS:
Pre-heat oven to 350°F
Beat egg whites until foamy, add 1/2 of the sugar and the extract and continue beating until soft peaks form.
To the egg yolks, add the remainder of the sugar.
Sift flour and baking powder together and alternate folding the dry ingredients and the egg whites into the yolks.
Using a pastry bag with a large round tip (#12), pipe "fingers", approx. 3" long onto a baking sheet lined with parchment paper.
Bake for approx. 8-10 min. or until lightly browned. Sprinkle lightly with sugar and cool on rack.
