Penne Arrabbiata or Angry Penne Sauce

Penne Arrabbiata means in Italian angry penne because the sauce is spicy hot. This a simple and tasty dish typical of Mediterranean cuisine.

This recipe belongs to Roman culinary tradition, despite being prepared in many other Italian regions, a simple recipe full of taste.

Perfect for those who like strong flavors, good fresh tomatoes and hot chili peppers. It's easy and in 20 minutes ready at the table!

Of course you can season any kind of pasta with this sauce, but penne shape are particularly good. The sauce slips in and wraps penne, without covering the full flavor of the pasta.

This dish was rediscovered recently and often used as a "night snack" (you know when gathering with friends ), it's an easy and quick dish that meets the approval of all men and women.




Penne with Vodka Sauce

Ingredients: serves 2

    - 5 oz (150g) penne
    - 1 ⅜ cup (300g) fresh or canned tomatoes
    - 1 chili
    - ½ onion
    - 1 sprig oregano
    - 1 clove garlic
    - 2 (30g) tablespoons extra virgin olive oil

Preparation: easy 20 min

1. Wash the tomatoes if they are fresh, peel the garlic and onion. Then finely chop the garlic, onion and chili. If you want the sauce less hot remove some of the chili seeds.

2. In a frying pan add the extra virgin olive oil, garlic and onion. Saute the vegetables for a minute.

3. Then add the crushed tomatoes.

4. Add the sprig of origano, cover and simmer for a while.

5. Drain the pasta that you had previously boiled and toss with the sauce in the pan.

6. Stir with a wooden spoon and season with salt and pepper if you like.

This pasta recipe with hot chili is ready, just sprinkle with some grated Parmigiano.
