Penne Pasta SaladPenne pasta salad is just one of an incredible amount of Italian pasta salad variations, and good ripe tomatoes are always prevailing almost in every recipe. Ingredients: serves 4
- 1 lb (450 g) ripe San Marzano tomatoes - 4 fresh basil leaves - 2 tablespoons extra-virgin olive oil - cheese to your taste - salt Add your choice of cheese like diced mozzarella or feta or other as you like.
Preparation: very easy 15 minutes1. Wash San Marzano tomatoes, cut in small pieces, put the tomatoes in a bowl. Wash the basil drain by removing the stems bearing only leaves. Pour extra virgin olive oil in a saucepan and heat. Add the diced tomatoes, basil leaves and mix. Cook the ingredients over high heat for 15 minutes stirring often. Add salt and remove from heat. Tip! The pieces of tomatoes must be cooked but still whole. 2. Bring to a boil at least 3/4 gal of water and add 2 Tbsp of salt. Plunge 10 oz of penne, stir and cook 11 minutes or as indicated on the package. Drain the penne in a serving dish and sprinkle with the diced tomatoes. Sprinkle the plate with a sprig of fresh basil, cleaned and chopped, stir and serve.
