Spaghetti Pasta Salad
with Tomatoes and Almonds



South Italy summer pasta recipe

This is a Sicilian spaghetti pasta salad recipe with raw tomato sauce and an unusual ingredient as almonds. This sauce will coat nicely your spaghetti or other long, thin pasta.

If you want to prepare this sauce in a traditional way you must use the mortar and pestle as in the Pesto Recipe, which can become another nice summer pasta sauce.

Yes I understand, maybe you are in rush, so your food processor goes well. It's quick and convenient to use








Ingredients: serves 4

1 lb (gr 454) spaghetti or other thin, long pasta
½ cup (gr 113) almonds
1½ lb (gr 680) ripe tomatoes
¼ cup (gr 57) extra-virgin olive oil
1 garlic clove, minced
2 tbsp minced fresh basil leaves
hot chili flakes to taste
salt








Preparation: easy with a food processor 20 minutes

1. Bring as usually the water to a boil for cooking the pasta.

2. Toast a little the almonds over medium heat until fragrant about 4 minutes.

3. Chop the tomatoes and place in the bowl of your food processor. Add the almonds, olive oil, minced garlic, basil, chili flakes and salt to taste. Just process until smooth.

4. Drain the pasta and transfer it back to the cooking pot and mix in the sauce.



Now your Sicilian raw tomatoes and almonds sauce is ready to be served.
