Most Italians don't have eggs for breakfast and pasta not at all, but you might think it completely different, so this dish is just right to begin your new day. Personally, I could have it for lunch or when short on time. Easy to make just 15 minutes, and fresh eggs are a must. If it becomes your dinner, and you want to pair a wine to it, I can suggest you an "Orvieto Bianco DOC". A popular dry white wine from Umbria region.
1 lb (gr.454) spaghetti 4 eggs 4 tablespoons (gr.57) grated Parmesan or Pecorino cheese frying oil salt and pepper
1. Set the water to a boil and cook the pasta as usual following the pack instructions. 2. Heat the oil in a large pan and fry 4 eggs. Once ready taste with salt and pepper. 3. Drain the pasta and make 4 portions, then cover with the fried eggs. Serve immediately with grated Parmesan or Pecorino cheese. Quite impossible to make a recipe more easy than this.
